We bring you the finest farm-raised
premium lamb, all raised on the green
pastures of Ohio and Northern
Appalachia. We ensure the highest
quality standards of our all-natural
lamb. Raised slowly and naturally by
selected and traditional family
farms, our lamb meats are unique by
their taste and flavors!
To ensure the premium quality of the
lamb we offer, we apply a rigorous
set of self-imposed standards. We
require the family farmers who
produce lambs for us to follow these
standards explicitly:

We buy our lambs only from
family farmers who agree to
raise them traditionally and
naturally. Each lamb gets
individual attention and care,
fresh air, space to graze and exercise. Lambs are treated
humanely.

We supervise the family farmers
who produce lambs for us to make
sure they meet our standards. As
an added check on quality, we
conduct periodic random
inspections of our contracted
farms.

We buy most of our lambs in the
state of Ohio, where the vast
majority of lambs are raised on
family farms, and where a
significant portion of the
entire country's seed- breeding-
stock producers are located.

Our contracting farmers breed
their high-quality ewes with
rams whose genetic
characteristics are approved by
us and are known to produce
desired qualities in the
resulting lamb meat, like
leanness and large loin eye
area.

Each lamb we buy carries a tag
uniquely identifying it and the
farm where it was raised, so we
can trace back any lamb meat
sold to the animal and the farm
from which it came.

The lambs that we purchase are
six to nine months old. This
ensures the best compromise
between size and tenderness.

Our lambs are lean: we buy lambs
displaying a maximum of 0.25"
inches of back fat, measured at
the 12-13th rib, when most lambs
average between 0.25" and 0.45".
Back fat is a good indicator of
the overall leanness of a lamb.

We assure tender, lean meat by
specifying a strictly natural
diet, with no artificial
additives. After they are
weaned, our lambs eat only the
finest native grasses. Later,
they also eat a mixture of whole
grains to give their meat a
consistent mild flavor.

We ensure the health of our
lambs and the safety of the lamb
meat we sell in several ways:

We allow farmers to use
medicines only to fight
sickness. If they do, the
necessary withdrawal period
must be respected. No lamb
will be slaughtered while
under medication.

The farmers cannot give
growth hormone to lambs, and
they cannot administer
sub-therapeutic doses of
antibiotics to stimulate
growth. Our lamb is hormone
free.

USDA inspects all our lambs
before and after processing.
This control guarantees the
absence of illness and
contamination.

In addition, our meats are
processed by high quality
plants, where each lamb is
processed individually and
manually. This adds the
visual inspection of people
who know and respect the
lamb product.

Our lamb is hand cut to
perfection: among other
advantages, hand cut lamb meat
is juicier when you cook it.
Although these are our current lamb
specifications, we continue to
revise them upwards. Working with
industry experts, we are continually
devising the highest quality
standards in the lamb meat industry.
